Summer Tart
When I saw these beautiful tomatoes I first wanted to paint them, but considering my mediocre art skills I decided I would honore their beauty more by cooking them. The result is a Summer Tart, perfect for those evenings when you don't want to spend much time in the kitchen but still want to enjoy a nice meal with chilled rosé or white wine.
Ingredients for 1 tart:
1 store bought puff pastry
2 tablespoons of olive paste (tapenade)
1 zucchini
4-6 tomatoes
1 fresh goat cheese
1/2 bunch of parsley, chopped
1/2 bunch of basil, chopped
1 clove of garlic, crushed
salt, pepper
• Preheat the oven to 200°C.
• Mix the goat cheese, the basil, the parsley and the garlic. Season to taste.
• Cut the tomatoes in chunks, peel the zucchini from four sides, each time stop as soon as you reach the seeds.
• Put the puff pastry in a tart pan. Spread the olive paste. Cover with the zucchini and the tomatoes, scatter the goat cheese in small lumps.
• Bake in the oven for 15-20 minutes.
