Salad Bella Italia!

When I go to a restaurant I always ponder for hours over the menu, trying to make my mind up. On our honeymoon we went to Rome and once we ate in a perfect restaurant, the food was great but most of all the waiter only asked us one question: red or white wine? Then the dishes just kept on coming, heaven! Speaking of Italy, I was trying to decide which antipasti to make and finally I had an Eureka Moment: Why choose? Zucchini and Carrot Salad with Basil

Summer Time is Salad Time! And this Italian salad with zucchini, carrots and lots of fresh basil is one of my favourites. Because of its ingredients I call it Zucaba Salad, if you come from Great Britain feel free to change the name to Coucaba. Whatever you call it, it is delicious and goes with everything. Italian pasta salad

My relationship with pasta salad had a rough start. The first time a pasta salad crossed my path was at a student party, the pasta was way beyond all-dente and drenched in store bought mayonnaise, the few defrosted peas that were added to this mix couldn't save it. Summer Tart

When I saw these beautiful tomatoes I first wanted to paint them, but considering my mediocre art skills I decided I would honore their beauty more by cooking them. Papardelle with meatballs

Inspired by the novel "You Gotta Have Balls" I decided to treat myself and my husband to pasta with meatballs. It was raining cats and dogs so it was a perfect time for some good old fashioned comfort food. Roulade of eggplant, red peeper and goat cheese

I read somewhere that the more colourful the dishes, the more healthy they are. I suppose this rule doesn't apply for red velvet cupcakes but I will use it as an argument for these delicious roulades of eggplant (aubergines), red pepper and goat cheese. I found the recipe in the cookbook "Roast Chicken and Other Stories" by Simon Hopkinson. I just added the goat cheese.
