Green Couscous Salad with Lamb Chops

This Green Couscous Salad keeps its promises, you get different shades of green and as a bonus different textures, soft broad beans, crunchy green beans and bursting capers. Every bite is a surprise. I got the idea from the New-Zealand Cook Annabel Langbein. June Menu

I love composing menus and I often spend an hour on my couch reading and looking for recipes, trying to decide what could go well together. I like to host dinner parties but I want to spend the evening with my guests and not stressing in the kitchen. This June Menu can be mostly prepared beforehand. It is light, full of flavours and puts a spotlight on fresh vegetables, so only choose really ripe tomatoes and fragrant strawberries. Green asparagus, broad beans and rocket salad

I went to the farmers' market this morning and saw fresh broad beans for the first time this year. When I came home I wondered what to do with them, so I asked the British gardener and cook Sarah Raven for advice by looking broad beans up in her "Garden Cookbook". I made her green asparagus, broad bean and rocket salad. She also adds fresh peas. I loved the firm green asparagus stalks with the soft broad beans and the peppery rocket leaves.
